While this is good news for tourism and local economies, it also reveal some key insights about global demand on these particular destinations.

What is buttermilk, exactly?

When making buttermilk, what sort of vinegar should you use?

We normally use apple cider vinegar, but regular white vinegar would also work! Apple cider vinegar has a subtle sweetness that blends nicely with baked products, giving them a bit additional tang and a little extra rise without being overpoweringly vinegar-y! 2. How to Make Buttermilk with Lemon Juice and Milk

Lemon operates in the same manner as vinegar does, as we discussed before. The acidity of the lemon juice reacts with the milk to make a pleasantly lemony buttermilk alternative. This is great for lemon breads, pancakes, or anything else you want to brighten up!

1 cup buttermilk is made by combining 1 cup milk with 1 teaspoon lemon juice.

What sparked the idea for this maple honeycomb ice cream?

The finest ice cream I’ve had this winter is this maple honeycomb ice cream (yes, contrary to what anyone else may tell you, ice cream is a year-round dessert). Because it’s a creamy maple ice cream blended with maple honeycomb bits, it’s the greatest. Whoaaaaaaaaaaaaaaaaaaaaaa Guys, I understand. I understand.

But first, let me tell you about the vacation that inspired the maple honeycomb ice cream. The Federation of Quebec Maple Syrup Producers invited me to join them on a trip to Quebec (also known here in the US as Pure Canada Maple). I had the most incredible four days in Quebec, touring farms, trying maple products (maple butter, y’all), and dining on world-class meals prepared by Maple Master chefs (because being a maple master is a thing, and when I first heard about it my world got that much happier).

On our first day in Montreal, we were greeted with a lovely “light lunch.” The first entrée consisted of octopus and northern shrimp mixed in a pepper-maple vinaigrette over a cylinder of quinoa salad. The second entrée was crispy skinned salmon served with cauliflower mousse and mussels encased in foamed maple water.

(If this is considered a light lunch, I’d want to have it every day.)

We spent the day following that fantastic supper wandering around Montreal. Old Montreal was particularly lovely, with its cobblestone streets and historic houses.

That night, we had what I now consider to be the most unforgettable meal of my life. It was the Federation’s annual Maple Festival, a massive yearly event. Every year, they commemorate its growers and producers with a multi-course banquet prepared by Maple Masters, world-renowned chefs. These chefs, who are well-known in Quebec, have a strong commitment to local foods and methods, particularly maple.

This is something I was almost completely ignorant of before to embarking on this journey. Maple syrup isn’t only a topping for pancakes (or waffles, or french toast, or a little portion of your eggs and sausages…) in Quebec. It’s a taste that may be found in a variety of meals. It’s both a seasoning and an ingredient. This supper was out of this world. We began with maple cocktails in a vast art gallery before moving into a 200-seat dining room for a 5-course dinner with wine pairings.

That night, we enjoyed a supper prepared by chef Louis Pacquelin, a 26-year-old Parisian who is revolutionizing Quebec cuisine. For me, there will be more maple drinks, as well as turnips prepared four different ways and a puff pastry topped with vanilla mousse, maple sponge cake, and coffee candy.

We went to Cabane de PicBois, a prominent family-owned maple syrup plantation in the countryside, on our last day. The traditional maple producing method was shown to us. It takes two hours to convert 40 liters of maple water into one liter of maple syrup. But consider this: maple is only harvested for 20-30 days each year, making it an extraordinarily limited season to meet global demand.

Inside, we dined on a rustic Québécois dinner prepared by the owner’s wife. We ate maple baked beans, maple bacon, maple bread, maple pork, and a variety of other dishes. The maple sugar pie with cream on top was my absolute favorite part.

We walked outdoors and made frozen maple lollipops as if that wasn’t enough. The maple utilized was a dark, nutty kind. One taste may be used in so many different ways.

Maple syrup has several interesting facts.

I learnt a lot about maple over my four days in Quebec. Things I didn’t even know existed. For example:

  • Maple syrup is produced in Canada by 71 percent of the world’s population. Quebec accounts for 91% of the total.
  • In comparison to granulated sugar, honey, and agave, maple contains the least amount of sugar per serving.
  • It helps to save the environment by protecting one of the earth’s natural biological processes: tree growth.
  • Quebec is the only place in the world where all maple syrup manufacturing is subjected to regulated quality control. Every barrel of maple syrup prepared for the market is tasted by full-time workers of the Federation.
  • In comparison to granulated sugar, honey, and agave, maple syrup contains the most minerals. It has considerable amounts of magnesium, calcium, and potassium, and provides 18 percent of your daily zinc consumption.

Beyond the facts, it was the individuals who motivated me the most about maple syrup. From the maple farmers to the Federation’s head of marketing to the man who informed us he had a maple syrup cellar in his basement, everyone we encountered on the trip was passionate about maple. The environment, the trees, the survival of a traditional practice, and the sweet, sweet syrup were all important to him.

Seeing how Québécois utilize a local product into their cuisine was amazing. We consumed maple vinegar, maple mustard, maple butter, maple confectionery, maple venison, maple veggies, maple fish, and so on.

Because eating with meaning is one of the nicest things I’ve ever experienced. It fosters camaraderie, development, learning, discovery, and desire. So, the next time you’re deciding between Aunt Jemima’s and the slightly more expensive Canadian Maple Syrup, I strongly advise you to go with the syrup. There are several explanations for this.

Let’s go back to this ice cream while we’re on the subject of want. It’s oooh-la-la-la-la-la-la-la-la-

Honeycomb made from maple

  • 1 cup sugar (granulated)
  • a quarter cup of maple syrup
  • 2 teaspoons soda bicarbonate

In order to make ice cream

  • 1 pint heavy cream (whipped)
  • vanilla extract (1/2 teaspoon)
  • salt (1/4 teaspoon)
  • a third of a cup of sweetened condensed milk
  • 1/4 cup maple syrup, undiluted

Instructions

How to make maple honeycomb

  1. Using parchment paper, line a baking sheet. Remove from the equation.
  2. Bring the sugar and maple syrup to a boil in a medium saucepan. Swirl every 30 seconds or so for approximately 7 minutes, or until the mixture achieves a dark amber hue.
  3. Remove the pan from the heat and stir in the baking soda. The mixture will aggressively boil up. Allow it cool fully before pouring into the prepared pan.
  4. Using a hammer or the back of a pot, break the hardened maple honeycomb.

Ice cream should be made.

  1. Whip the heavy cream until soft peaks form in a mixing basin. Fold in the vanilla extract and salt, and beat for another 30 seconds or until the mixture retains soft peaks.
  2. Combine the sweetened condensed milk and maple syrup in a mixing bowl. Whip until everything comes together, just beyond soft peak (preferably medium peak). Is there such a thing? It’s becoming a thing).
  3. Scoop the ice cream into a metal bread pan or other freezer-safe container after carefully spooning in 3/4 of the crumbled maple honeycomb. Finish with the remaining 1/4 of maple honeycomb.
  4. Before serving, put it in the freezer for at least 12 hours.

Yes, the chances are stacked against you. And you’ll almost certainly fail. However, if you are unhappy with your life and nothing changes, you are still failing… Aren’t you the one?

My argument is that even doing nothing has a cost.

The cruise ship embargo in Key West seemed to be over, but recent events appear to have placed a fresh twist on a situation that is prompting cruise companies to explore elsewhere. Celebrity Cruises, Virgin Voyages, and MSC Cruises have all recently altered their itineraries to avoid Key West.

Carnival Cruise Line still offers Key West trips on three ships in January and more after that, despite a letter from ship brokers indicating that Carnival had cancelled these stops.

Despite the fact that the state of Florida declared the November 2020 vote barring ships from Key West to be unconstitutional, the city’s mayor proposed a cruise ship restriction ordinance. It’s impossible to determine if cruise ships will return to Key West now that the dispute is in mediation.

Is it allowed for cruise ships to dock at Key West?

The inhabitants of Key West voted in November 2020 for a referendum that banned cruise ship traffic for approximately 95 percent of the ships that visit the region. As a result of the vote, cruise ships were not permitted to dock at Key West.

Governor DeSantis, on the other hand, approved a new legislation on July 1, 2021, preventing communities from regulating maritime trade by referendum. There was no rule prohibiting cruise ships from stopping at one of the city’s three usable ports, which included the privately owned Pier B as well as the Mallory and Outer Mole docks.

The problem had been uncomplicated up to this point. Until municipal commissioners stepped in and stated they wanted to find a method to put the voters’ decision into action by enacting a cruise ship restriction law.

The Governor’s statute prohibits port control by referendum, but the city commissioners retain the ability to manage the Mallory and Outer Mole city-run ports; however, the Pier B pier is a different issue. The ordinance has yet to be approved because the city has to find a lawyer ready to create something that will unintentionally result in a slew of lawsuits.

Is it possible for Key West to ban ships from Pier B?

Pier B is owned by the Pier B Development Corporation, which is in turn controlled by Mark Walsh. The Mallory Square dock is owned by the city of Key West. The US Navy rents the Outer Mole Pier to the city. While the rule may include Pier B and ships arriving there, the issue is whether the city wants to go that far.

Pier B’s owners and the city of Key West are bound by a long-term agreement. First and foremost, both parties must agree to terminate the transaction without it being considered a violation of contract. If the city approves the legislation without first reaching an arrangement with the Pier owners, it will almost certainly result in lawsuits:

“I know we can do something (to restrict ships) at Mallory Pier and the Outer Mole,” Commissioner Billy Wardlow says, “but Pier B being private property is different.” I don’t want someone telling me what I can and can’t do with my home.”

What’s Next for the Cruise Ship Industry in Key West?

A letter from Caribe Nautical Ships’ representatives offered insight on what is next for Key West. The agent describes interactions between cruise companies and local officials, claiming that despite the absence of a formal legislation, the city essentially forbids cruise ships, which is against Florida law. Carnival officials were advised on a Zoom call that no port agreements would be considered if ships did not comply with the now-illegal 2020 referendum’s ship limits:

“The first was a Zoom meeting between Carnival Cruise Line (CCL) executives, the City Manager, the Port Director, and the City legal department, which resulted in immediate cancellations of long-established cruise ship berth reservations. The second was a Zoom meeting between Carnival Cruise Line (CCL) executives, the City Manager, the Port Director, and the City legal department, which resulted in immediate cancellations of long-established cruise ship berth reservations. “No MOA would be considered unless it incorporated the ship size limitations reflected in the November 2020 referenda,” Carnival officials were informed explicitly.

Despite the fact that the Port Agreements required by the CDC’s Conditional Sail Order are not necessary in the state of Florida, Carnival cruise line calls were promptly canceled:

“CCL and Holland America Line (a Carnival firm) informed us that they were canceling their numerous ship visits into Key West since the City declined their MOAS without the ship limitations included.”

Carnival Cruise Line has not verified this information from the ship’s agents in Key West for the Carnival Conquest, Carnival Sunrise, and Carnival Magic’s forthcoming visits in January of next year.

Whether cruise ships are authorized or not, cruise companies seem to be avoiding Key West. The potential of the regulations passing in Key West creates uncertainty when it comes to cruise planning. According to reports from Key West, representatives from Safer Cleaner Ships, Pier B, and Caribe Nautical Ships’ agents, as well as municipal authorities, are now discussing the matter.

I like going for lengthy hikes in the woods. Next to my family’s vacation cottage in Nova Scotia, Walden Pond is my second favorite spot on the planet.

Hiking is something I like doing. Biking is also an option. Climbing and swimming are other options. Being entirely immersed in the ocean and allowing the water’s pulse to gently move me back and forth is one of my favorite sensations.

My love of the outdoors, on the other hand, should come as no surprise. I used to go camping with my father a lot when I was little. I went backpacking in the northern Himalayas while I was in high school. For seven summers, I attended Adventure Camp.

Yet, in the past year or so, I’ve developed a stronger desire to be in nature, and to be in it more often.

I fantasize of having three hens in my backyard in a little hen house. I’m thinking of sitting on a wide porch and letting the sun shine down on me. About my future puppy and me going through the woods every morning.

Ingredients

to make macarons

  • 100 grams of egg whites
  • 100 g sugar granules
  • 100 grams of almond flour
  • 100 g sugar powder
  • 1 tablespoon cocoa powder (Dutch process)
  • a teaspoon or two of red food coloring
  • a pinch of salt

icing made with cream cheese

  • a half-cup of powdered sugar
  • 2 ounces room temperature cream cheese
  • 2 tablespoons room temperature butter

Instructions

  1. Preheat the oven to 300 degrees Fahrenheit. Preheat oven to 350°F. Line two baking pans with parchment paper. Remove from the equation.
  2. Over medium heat, bring a small saucepan of water to a boil. Combine egg whites and granulated sugar in the bowl of a stand mixer. Create a double boiler by placing the bowl over the heating pot.
  3. 1 to 1.5 minutes, whisk egg whites and sugar until sugar is entirely melted and egg whites are white and fluffy. Remove the bowl from the standing mixer and turn it off.
  4. Fit the whisk attachment to the standing mixer and whisk on high speed for 2-3 minutes, or until firm peaks form. You’ve just created a Swiss meringue, congrats!
  5. Combine almond flour, powdered sugar, and cocoa powder in a meringue bowl and gently shake to combine. Add salt and red food coloring.
  6. Place the bowl on the whisk attachment of a stand mixer. Whisk for 10 seconds on medium-low speed with the mixer. Stop the mixer and scoop up portion of the batter with a spatula. You can stop if you can construct a figure-eight with the dripping batter without it breaking. However, you’ll probably need another 5-10 seconds. So go through the procedure again and attempt the figure-eight. Slow-moving lava is the greatest way to explain the ideal consistency. It should yield slightly, as if it were in slow motion.
  7. Scoop the batter into a large pastry bag equipped with a 1 inch tip after it has reached the desired consistency. Pipe silver dollar-sized circles onto baking sheets lined with parchment paper, leaving approximately 1.5 inches between each meringue. Remove any air bubbles by slamming the baking sheet three times against the counter.
  8. The best thing is that you don’t have to let them air dry. Simply bake them for 13 minutes, rotating halfway through, and then cool fully before removing them from the baking pans.
  9. Make the icing while the macarons are baking. Whisk together the powdered sugar, cream cheese, and butter in a small mixing basin. 1 tablespoon milk may be added if the mixture is too dry.
  10. Fill a piping bag with frosting and a 12 inch tip, then leave aside until the macarons are cold and ready to pipe.
  11. Once the icing is finished, pipe it onto a macaron and sandwich it between two more macarons. Rep with the remaining macarons.

4) You get a “high” from being productive. It’s the same sensation you get after a good exercise. Of course, this emotion motivates you to be productive the following day. The next day, and the day after that.

5) Fortitude. As Arnie puts it:

Victory gives you confidence, but adversity gives you strength.

6) After all, how’s it going for you if you’re not doing this? Isn’t it at the very least worth a shot?

Stuttgart’s markets, along with numerous other European Christmas markets, are now closed for the next holiday season as of November 23, 2021, however the destination plans to offer them again following year. Fortunately, the light display and the Christmas Garden are still available to the public.

HEY GUYS, HEY GUYS, HEY GUYS I’VE RETURNED. And not just any brownies, but pumpkin chocolate swirl brownies.

It’s been almost a month since I last posted. In my real-life career, I’ve been working my tail off. I’m the head of catering, events, and social media for a network of Ann Arbor restaurants, and I’m loving it. I eat a lot of delicious food, get to meet people who are planning weddings and cocktail parties, and post around four images of food on Instagram every day. However, it leaves me with almost little time to do things like work on Broma. So I said broma today. I’m missing you, so let’s produce a fantastic post together. And the end product is these pumpkin chocolate swirl brownies. I hope you enjoy yourselves!

To make the brownies, combine the following ingredients.

8 tablespoons unsalted butter (1 stick) + extra for the pan 2 cups all-purpose flour 6 ounces bittersweet chocolate, chopped 1 teaspoon powdered baking soda cayenne pepper, 1/8 teaspoon a half teaspoon of salt a quarter cup of sugar a dozen big eggs 1 tablespoon vanilla extract (pure) 1 1/4 cup pumpkin puree (solid pack) a quarter cup of vegetable oil 1 teaspoon cinnamon powder 1/4 teaspoon nutmeg powder

Preheat the oven to 350 degrees Fahrenheit. Using butter, grease a 9-inch square baking dish or pan. Cut a piece of parchment long enough to cover the bottom and two sides of the pan (making it much simpler to remove). Also butter the lining.

In a heatproof dish put over a pan of boiling water, melt the chocolate and butter, stirring periodically until smooth.

In a large mixing bowl, combine flour, baking powder, cayenne, and salt; set aside. In the bowl of an electric mixer equipped with the paddle attachment, beat the sugar, eggs, and vanilla until frothy and thoroughly blended, 3 to 5 minutes. Mix in the flour mixture.

Pour half of the batter (about two cups) into a separate mixing dish and toss in the chocolate mixture. If it’s too thick (like mine was), thin it up with a little additional batter (a few tablespoons or so) until it’s more pourable. This is vital since my pumpkin half was thick and my was thin, thus swirling the two together was difficult.

Combine the pumpkin, oil, cinnamon, and nutmeg in a separate basin. Half of the chocolate batter should be transferred to the prepared pan and smoothed out with a rubber spatula. Half of the pumpkin batter should be on top. Make one more chocolate layer and one more pumpkin layer by repeating the process. So that the batters don’t set, work rapidly.

To get a marbled look, gently swirl the two batters together using a tiny spatula or a table knife. Make sure your knife goes all the way to the bottom of the pan–I didn’t and ended up with a chocolate foundation, which isn’t too awful. If you’re using nuts, sprinkle them on top.

Bake for 40 to 45 minutes, or until set. Allow to cool completely in the pan on a wire rack before cutting.
